Grilled Shrimp with Mango Salsa
Ingredients:
Serving Size: 2
- 1 ripe mango, diced
- 1/2 red bell pepper, chopped
- 1 lime, juiced
- 1 handful of cilantro leaves, chopped
- 1/2 lb shrimp
- salt, to taste
Instructions:
- In medium-large bowl, combine mango, red pepper and cilantro.
- Pour lime juice in, sprinkle over salt (to taste), toss together and set aside.
- Place shrimp into pan with butter and grill.
- When shrimp is done, toss together with mango salsa & Enjoy!
- Optional: Enjoy over pasta, with tortilla chips or as is.
