Cilantro-Lime Chicken and Black Beans

Ingredients:
Serving Size: 4
  • 1 handful cilantro, chopped
  • 1 lime (juice and zest)
  • 2 boneless chicken breast
  • 2-3 garlic cloves, minced
  • 1/2 red onion, chopped
  • mushrooms, chopped
  • 1 can (15 oz) black beans
  • brown/white rice

Instructions:
  • While rice is cooking. Clean, season and grill chicken cutlets in large sauce pan.
  • When chicken is done, golden brown on each side. Take out one at a time, chop up and place back in pan.
  • Combine half of cilantro, red onions and garlic with the chopped chicken.
  • Season to taste. Cook for 3 minutes.
  • Add black beans and pour in lime juice and zest. Cook for another 3-5 minutes. Periodically mixing. 
  • Once rice is cooked, combine with chicken mixture and top with remaining cilantro.
  • Enjoy!

Grilled Shrimp with Mango Salsa


Ingredients:
Serving Size: 2
  • 1 ripe mango, diced
  • 1/2 red bell pepper, chopped
  • 1 lime, juiced
  • 1 handful of cilantro leaves, chopped
  • 1/2 lb shrimp
  • salt, to taste

Instructions:
  • In medium-large bowl, combine mango, red pepper and cilantro.
  • Pour lime juice in, sprinkle over salt (to taste), toss together and set aside.
  • Place shrimp into pan with butter and grill.
  • When shrimp is done, toss together with mango salsa & Enjoy!
  • Optional: Enjoy over pasta, with tortilla chips or as is.

Warm Spinach Salad 
with Green Apples & Peaches

Ingredients: 
  • 1-2 ripe peaches, pitted and quartered   
  • 2 tablespoons of olive oil (vegetable oil, optional)
  • 1/2 red onion, chopped
  • 1 green apple, diced
  • spinach
  • grape tomatoes
  • salt
  • pepper
  • gorgonzola and walnuts as optional garnish 

Instructions:
  • Preheat small pan on medium heat with 1 tablespoon of oil.
  • Fry peaches and green apples, gently tossing until sides are browned to liking. Remove from heat and set aside.
  • Combine spinach, onion, tomatoes, salt, pepper, and olive oil in medium-large bowl.
  • Toss ingredients in bowl, along with the peaches and green apples.
  • Enjoy!
