Grilled Shrimp with Mango Salsa


Ingredients:
Serving Size: 2
  • 1 ripe mango, diced
  • 1/2 red bell pepper, chopped
  • 1 lime, juiced
  • 1 handful of cilantro leaves, chopped
  • 1/2 lb shrimp
  • salt, to taste

Instructions:
  • In medium-large bowl, combine mango, red pepper and cilantro.
  • Pour lime juice in, sprinkle over salt (to taste), toss together and set aside.
  • Place shrimp into pan with butter and grill.
  • When shrimp is done, toss together with mango salsa & Enjoy!
  • Optional: Enjoy over pasta, with tortilla chips or as is.
