Cilantro-Lime Chicken and Black Beans

Ingredients:
Serving Size: 4
  • 1 handful cilantro, chopped
  • 1 lime (juice and zest)
  • 2 boneless chicken breast
  • 2-3 garlic cloves, minced
  • 1/2 red onion, chopped
  • mushrooms, chopped
  • 1 can (15 oz) black beans
  • brown/white rice

Instructions:
  • While rice is cooking. Clean, season and grill chicken cutlets in large sauce pan.
  • When chicken is done, golden brown on each side. Take out one at a time, chop up and place back in pan.
  • Combine half of cilantro, red onions and garlic with the chopped chicken.
  • Season to taste. Cook for 3 minutes.
  • Add black beans and pour in lime juice and zest. Cook for another 3-5 minutes. Periodically mixing. 
  • Once rice is cooked, combine with chicken mixture and top with remaining cilantro.
  • Enjoy!
